I came across these mini courgette fritters when looking for some new and interesting finger foods that the little one could eat. The original recipe came from The First Food Book by Ella's Kitchen which I would highly recommend to anyone looking for interesting food to give to a baby or young child.
What you need to have:
- 1 x courgette coarsely grated.
- 30g of plain flour.
- Approx. 3 tablespoons of finely grated cheese (in the book it says Parmesan but I used Cheddar).
- 1 x medium egg.
What you need to do:
1. Gently dry the grated courgette with a clean tea towel to remove any excess water.
2. Put your courgette, the cheese, flour and the egg into a bowl.
3. Mix all of the ingredients together to make a loose mixture.
4. Heat the oil in a frying pan and place approximately one tablespoon of the mixture in to the pan for each fritter.
5. Cook the mixture for two or three minutes on either side until it is cooked through and golden brown.
6. Place on kitchen roll to soak up any excess oil and serve when cooled.
What we thought:
These fritters went down really well with the little one - they were easy to hold, could be eaten easily by a baby with only two teeth and were tasty enough to keep her coming back for more.
From my point of view, they were quick and easy to make and, if you didn't have all of the ingredients in the cupboard, you could quite easily switch them out for something different - providing you had the base ingredients of the egg and the flour.
My only concern was the fact that they are fried in oil, making them not the healthiest thing to give to your little one on a regular basis. When I made them I tried to use the smallest amount of oil possible and ensured that the oil was nice and hot before putting the mixture into the pan, in order to reduce the amount of oil soaked up by the fritters themselves.
Overall, these are definitely a nice little treat for your little one if they like finger foods. I would definitely recommend giving them a try.

Could you not fry them using that 1cal spray oil? That's what I use for all of mine and Luke's fried foods. :) You have to fry at a lower temp than usual, but that's okay. These look yummy and healthy and I'll be giving them a go. Ray xx #brillblogposts
ReplyDeleteI did think about using Frylight and have, subsequently, used it when I made these a second time - worked really well and they were much less oily! Let me know how they go! x
